Mediterranean Scallop Pissaladière

Ingredients
· 180g puff pastry
· 1 egg
· 4 large onions
· 4 tbsp olive oil
· salt
· pepper
· thyme
· 4 scallops
· 1 orange(segmented)
For the sauce:
· 1 orange(juice and zest)
· 12 black olives(pitted)
Recipe steps
Prepare the puff pastry by rolling out the dough into a 10cmx20cm strip. Fold in the edges, crimp them and brush the sides generously with egg wash. For the delectable filling, gently sauté sliced onions with a little oil, seasoning and thyme until golden and soft. Once cooked, set the onions aside to cool, then spread them evenly onto the center of the pastry. Preheat your oven to 180 degrees and place the pastry inside. Bake for approximately 20 minutes until the pastry turns golden and crispy.
Next, move on to preparing the scallops and zesty olive and orange puree. Begin by quickly blitzing the olives. Combine the blitzed olives with some fresh orange juice, its zest and a drizzle of oil. Then, heat up a pan for the scallops. Once it's hot, carefully place the scallops in the pan and cook them until they reach a beautiful golden color and are thoroughly cooked.
Now, it's time to build the Mediterranean flavors of this dish. Begin by cutting off each end of the oven-baked pissaladière and slicing the middle it into three pieces. Place a slice of orange on top of each pissaladière slice to add a vibrant touch. Next, carefully crown each slice with a pan-seared scallop. Gently drizzle the zesty olive and orange puree over the scallop for stunning presentation and exquisite flavors.
